I have been trying to get the perfect strawberry for a while. The things that I have found is that it will take a couple of strawberry flavors, and I use fa fresh touch or capella with strawberry ripe. TFA strawberry ripe, try to keep around 4%. Capella @ 3 -5% fa fresh touch @1%. A trick with strawberry is to add dragonfruit, and I usually add 2%. It will not take anything away from the strawberry, but will brighten or "pop". Strawberry is a bit of a fader, so if you are using it in a bakery mix that needs a few weeks steep, you add it after the steep. Another trick with strawberry is adding cactus @ low%, and if you are after a strawberry jam, try adding fa liquid amber, or an alcohol flavor of choice@ no more than 1%.
